How to Brew

Brewing suggestions:

Pour over (Great for both Tanzania and Congo) 

  1. 20 grams of either T or C coffee
  2. Ground to medium
  3. Wet the filter before adding grounds (this removes any paper taste)
  4. Pour 50 grams of hot, almost boiling, water slowly over the groundsĀ 
  5. Wait 30 seconds and then stir – you will see a darker brown foam on the coffee rather than off white
  6. Wait 3 minutes for the rest of the water to go through the filterĀ 
  7. I like to give it another couple of minutes to develop but that is totally optional

Espresso (Preferred for Congo)

  1. 18grams of Democratic Republic of Congo grounds
  2. Espresso grind pretty fine (our Baratza is set to 3)
  3. Single wall double shot Porta Filter
  4. Double shot of espresso (pull should take ~30 seconds).
